Recipe of the Week

Shrimp Scampi

Ingredients:
1 Pound of Medium Shrimp – Peeled and de-veined
1 1/2 Tbsp of Pure Olive Oil
2 Tbsp of Finely Chopped Garlic
1 ˝ Cups of White Wine
1/2 cup of Fresh Lemon (use the juice only)
1 Tsp Italian Seasoning mix
1/2 Cup of Butter
1 Tbsp of Fresh Parsley chopped
Flavor with Salt and Pepper

Directions:
Heat skillet and then add in the olive oil, and do not allow the oil to smoke. Add the shrimp and cook it until tender and it's no longer translucent. Next remove the shrimp from the pan and decrease heat slightly. Add the garlic and cook it for 2-3 minutes. Try not to brown the garlic as this will render a slightly bitter flavor. Once the garlic is cooked, add the white wine. Squeeze some juice from the lemon into the pan, and reduce the wine by half. After it is reduced, next add the Italian seasoning blend. Now reduce the heat to low, and slowly add in butter, 1 Tbsp at a time. The butter should slowly begin to dissolve into the sauce and create a nice creamy texture. If the pan is too hot the butter will separate. As soon as the butter is assimilated, add the shrimp back into the sauce, sprinkle the parsley, and season to taste with salt and pepper.

Gone Sheep’n
   Gone Sheep'n has become a popular term among local fishermen over the past couple of years. These fishermen are not referring to work they have to do on the farm before they can go fishing. They are actually referring to fishing for one of the most popular fish in the lowcountry, the Sheepshead. These fish are popular because they provide a challenge each and every time you fish for them. They always put up a great fight, but the biggest challenge lies in hooking them. Many a fisherman has left the dock to fish for Sheepshead only to return to the dock with the same amount of fish they left with and a lot less bait. My personal philosophy on Sheepshead fishing was I'm going to feed plenty and if I'm lucky I may actually catch one or two. Over the years I have refined my techniques and listened to other more experienced Sheepshead anglers and today I'm happy to say I catch almost as many as I feed.

Getting Information About SC Public Boat Ramps Now Easier Than Ever
    
Planning a day on the water is now easier than ever with a new search feature at the S.C. Department of Natural Resources Web site. The Managed Lands section has been enhanced to include a searchable database for public boat in ramps in South Carolina. This list can be found through the Managed Lands section or directly at https://www.dnr.sc.gov/mlands/boatramp
     You can search boat ramps by lake, reservoir and river or by county. There you'll find detailed printable maps along with longitude/latitude, contact information and even features about the boat ramp like number of fishing piers, parking spaces, boat launches and courtesy docks. The lakes or reservoirs listed are not a complete list of lakes or reservoirs in South Carolina.
     While at the S.C. Department of Natural Resources (DNR) Managed Lands site make sure to explore other public properties around the state. You can search properties by name, county location or activity. Get descriptions and maps of fishing lakes, scenic rivers, bird sanctuaries and more.

    A new year is underway that holds a lot of promise. There was 63 fish tagged in January, a new record. The growing number of fish being tagged in December and January adds a new dimension to the Dolphin Research. It is the first time that we have the opportunity to begin learning the movement patterns of fish around Puerto Rico. There is also the real possibility that one of these Puerto Rican tags could be recovered by an angler off the U.S. East Coast. Fall and winter tagging off Florida has resulted in recoveries that are beginning to show a different movement behavior from the summer fish found off the Sunshine state. Recoveries resulting form these Florida tags, could help settle the raging debate over whether there is a fall southerly migration off south Florida.
     With a prayer that the economy continues to strengthen, I look forward to 2010 and the exciting information that the tagging and tag recoveries will bring.

The Final Word

     The fishing this past week has been pretty good considering the weather and wind. Some people did fish over the weekend after the snow and caught some nice redfish, a few trout, and some black sea bass offshore. This weekend is actually looking like the first good weather weekend we’ve had in quite some time to if you get a chance to get out, let the rest of us know how you did. We will keep our fingers crossed that the weathers weekend turns out nice.
