Recipe of the Week

Shrimp Fajitas

Ingredients:
1 1/2 lbs Medium or Large Shrimp, peeled and de-veined
1 Medium onion, sliced
1 Sliced bell pepper
3 Tbs Butter
4 Tbs. Lemon Juice
1 Tbs Old Bay Seasoning
1 tsp Garlic salt
4 flour tortillas

Directions:
Sauté' onion and bell pepper in butter until crisp and tender. Add remaining ingredients except tortillas and sauté' 5 minutes longer or until Shrimp are pink. Warm tortillas fill each one with shrimp mixture. Roll tortilla up and top with salsa, sour cream, shredded cheese and guacamole. Note: Hot Sauce is excellent if you want to spice this dish up a little.

     The 4th of July is upon us again, and most of us know all too well just how busy the waterway will be this weekend. Over the years the CharlestonFishing.Com staff has put together several articles on how to prepare for the increased boat traffic and congestion of this busy holiday. DNR Courtesy Boating Inspections Set During July 4 Weekend
     The S.C. Department of Natural Resources Law Enforcement Division
will again be conducting courtesy safety inspections at some public boat
landings in an effort to keep state waterways safe during the upcoming
July 4th holiday weekend. As of mid-June this year there have been 13
boating fatalities. This compares to a total of 16 boating fatalities in
2007.
     S.C. Department of Natural Resources (DNR) boating safety and
enforcement officers will perform a quick, but thorough, inspection for
items such as required safety equipment and proper boat and motor
registration. Those who are not in compliance with safety regulations or
registration requirements will not be ticketed during the complimentary
inspections. Boaters will be given an opportunity to correct the problem
before they launch. DNR officers will also be available to answer
questions and give boaters tips on how to stay safe on the water.
     "Twelve of the thirteen fatal fatalities so far this year were
preventable because people were not wearing a personal flotation device
(PFD)," says Col. Alvin Taylor, head of DNR Law Enforcement. "The bottom
line is PFDs save lives, so put on your life jacket before you board
your boat and don't take it off until the voyage is over."
     To report boating violations such as reckless operation or an
intoxicated boat operator, call the DNR toll-free, 24-hour hotline at
1-800-922-5431. For a copy of South Carolina's boating regulations, to
find out about local boating safety courses or to obtain a free float
plan form contact the DNR Boating Safety Office at 1-800-277-4301 or
visit the DNR Web site at www.dnr.sc.gov/boating/index.html .

The Final Word

     The strong south west over the weekend and into the first part of the week has kept a fair number including myself on the hill this week, but things are looking up for the holiday weekend. Inshore action remains good on the Reds in the creeks, and on the flats. There are also some nice catches of Reds at the rocks as well as some nice Trout and Sheepshead. The Flounder and Spanish are in the inlets and the water is certainly warm enough for Tarpon!
     Offshore action continues to be good if you can get past the Barracuda. The Dolphin are in as shallow as 70-feet and the Wahoo are hitting on planers around the ledge. Looks like the Sails are being caught just beyond the ledge. Kingfishing has been fair and offshore bottom fishing remains good.
