Tuna Croquettes
Ingredients:
1 egg
1 pound poached Tuna
2-tablespoons lemon juice
3-tablespoons butter
31/2 tablespoons flour
1/8 teaspoon salt
1 cup of milk
Cracker crumbs
Directions:
Make cream sauce by mixing butter, flour, salt and
milk. Simmer until thickened. Set aside until cold.
Flake tuna. Add I slightly beaten egg, and lemon
juice to the white sauce and mix in tuna. Allow to
chill in refrigerator for one hour. Shape into
croquettes and roll in fine cracker crumbs. Pan fry
in olive oil until hot. |

The Surf
Mystery
“And don’t forget, Thursday is dollar
mystery beer night at such and such tavern!”
You used to hear it advertised on the radio all the time.
Basically you handed the bar tender a dollar, he reached into the
bottom of a cooler and whatever brand beer he grabbed you got! You
may get a high dollar bottled import, a good domestic, or you may
end up with something so nasty tasting that it would make a Billy
Goat puke.
If you ask me the mystery is one of the best aspects to
summertime surf fishing in the Carolinas. You just never know what
flavor you may tie into. While large Redfish are usually my personal
favorite target in the surf, there is always some fun by catch to
keep you entertained. Tarpon frequent the same waters in the
summertime as well as both Spanish and King Mackerel, all types of
sharks, Bluefish, Whiting, Trout, and Flounder. Perhaps the less
favorable flavors would be Sail Cats, rays, and tiny sharks.

DNR partners with
Harry Hampton Hunting and Fishing Expo
The public can learn first-hand about South
Carolina’s matchless natural resources and why the S.C. Department
of Natural Resources (DNR) says "Life’s Better Outdoors!" on Friday,
Saturday, and Sunday at the Harry Hampton Hunting and Fishing Expo
at the Spartanburg Expo Center in Spartanburg. Exhibits, displays,
hands-on activities and seminars will showcase DNR’s efforts to
protect, conserve and manage the state’s woods, fresh and salt
waters and marine resources.
The Expo will be held August 21-23 at the Spartanburg
Expo Center, 6655 Pottery Road, Spartanburg (Interstate 26, Exit
17). The Hunting & Fishing Expo will be open from 1 p.m. to 8 p.m.
Friday, Aug. 21; from 10 a.m. to 7 p.m. Saturday; and 11 a.m. to 5
p.m. Sunday. Admission to the Expo is $6, and parking is free. Kids
7-12 get in for $4; children under 7 are admitted free.
DNR will feature demonstrations, live animals and more.
Visitors will learn about hunting, freshwater and saltwater
fisheries and a host of related subjects. Highlighting DNR’s
exhibits will be their popular Take One Make One (TOMO) Mobile
Education Trailer. TOMO specifically targets youth and young adults
who have not experienced a previous shooting or hunting activity.
The TOMO mobile education trailer features indoor BB shooting
ranges, virtual reality shooting and more. DNR’s boating mascot, Zip
It! will also be on hand promoting safety on the water and reminding
everyone to wear a PDF (personal flotation device).
The agency will also have a virtual fishing simulator
set up for the thrill of catching not only freshwater species, but
offshore big game as well. DNR’s Marine Resources Division will have
marine species on hand for those who want the supervised experience
of touching a marine animal.
The agency will offer free TEAM DNR stickers to all who
attend.
The Harry Hampton Hunting & Fishing Expo is sponsored
by the Harry Hampton Memorial Wildlife Fund Inc. The Hampton Fund is
a private, non-profit corporation governed by a volunteer board of
directors from across South Carolina which partners with DNR to
benefit conservation of wildlife, marine and other natural resources
in South Carolina. Funds are obtained solely through private
donations, special promotional projects and fund-raising events. The
Hampton Fund uses proceeds to fund natural resources conservation
projects in South Carolina. Examples include programs such as Hooked
on Fishing, Not on Drugs; Operation Game Thief; Project WILD, Camp
Wildwood and becoming An Outdoors Woman. |

The Final Word |
Another
great week for fishing. It was a little bumpy offshore on
Sunday, but I think most folks got there fix in for the
Miracles Tournament on Friday and Saturday. Speaking of the
tournament, lots of nice Kings caught, many in the 30s, they
are out here for sure so get on em! Offshore action has also
been great for Sails with a lot of fish caught in shallow
over the weekend with live bait. The Dolphin bite remains
good, and the Swordfish bite has been excellent for those
die hard overnighters.
We fished inshore on Saturday for Tarpon. Managed a few
sharks and a big ray on live mullet, but no silver kings.
Did pick up dinner or the way back to the house with a nice
flounder on a finger mullet fishing the docks in the Folly.
Fished the surf on Sunday with the family, no Reds just some
cut offs from sharks. The tides have been perfect the week
for tailing reds. Most are doing well with DOA shrimp, jerk
baits, and spoons. We should have 6-foot plus tides right on
into next week. The Trout bite remains good, but most of the
Trout seem to be on the smaller side currently. The
Spadefish remain at the reef and the Sheepshead are at the
jetties and around other structure in the harbor.
