pro tip: continental sauce consists of soy, ketchup, black pepper, oregano, oil, and garlic. dip those beer batter fried chanterelles in that and report back.

i had permission from a man on JI to pick the oyster mushrooms that grew out of a damaged spot on an oak tree in his yard around Christmas every year, most productive tree i’ve ever seen. he made me promise i’d check the ID book once more when i got home, he was convinced I was batstool crazy and it would be my last meal.

they had the tree removed last year, which really sucks. i’d have taken the log to my house if i knew it was coming down

Picked these yesterday for dinner this weekend. Wife likes the smaller ones with steaks. Never tried deep frying them so we’ll try that too, with the bigger ones.

they are an awesome seasonal resource and flushing like crazy most places finally!

I call those two morphs “stumps” and “flutes” for lack of better descriptive terminology.

I like to use the stumpy ones for frying because they have more body.

Baby stumps are “nubbins”, makes a great presentation when sauteed whole as a topping for steaks, grilled fish, etc… maybe with some of that asparagus EF has up there.

one more tip:

pizza boxes make good short-term storage in the fridge. single layer, stackable, breathable.

they do well in sealed containers for a few days, but they sweat a lot and can get mushy if you don’t use them quickly.

I resisted picking a couple of dozen large ones that were growing in a nice shaded area last week, hoping that they would spore out. Checked them this morning and they were all decaying.

Wife deep fried some yesterday, they were pretty good. Daughter preferred the smaller ones that were sauteed.

This old post popped up and I’v got to ask… Did you ever get Bwang to look at Mushrooms with ya? I’d love to be a part of that. I joined a group on Face book that identifies mushrooms, but still don’t feel confident about picking and eating them.

We’ve talked about it but haven’t done it. I’ll tell you this; I destroyed a PILE of oyster mushrooms very recently. At least as many as what’s in that picture above!

Still haven’t gotten out with 23, although we’ve tried a couple times. The only chanterelle flush we had this year was in July on JI, and we just ate what will probably be the last of them

That’s soft mozzarella, not butter. I remembered too late to get it to melt on the chicken

@Fred67 Chanterelles are the easiest and safest to identify because there’s almost nothing else to confuse them with here from what I’m told

I know there are mushroom ID classes that are taught by experts, pretty sure that’s how you get the license to sell wild ones here in SC but I never had a head for profits, I just share the extras. Would still love to take the class
